Recipes

Apple Crisp

4-6 medium tart (hard) apples (@ 4-5 cups sliced)
1/ 4 cup brown sugar
1/ 4 cup pure maple syrup
1/ 2 cup flour
1/ 2 cup quick cooking oatmeal (1 min.)
1/ 3 cup butter
3/ 4 tsp. ground cinnamon
3/ 4 tsp. ground nutmeg
pinch of salt

Heat oven to 375º F. Grease bottom of 8 inch square pan.
Spread apples in bottom of pan.
Mix remaining ingredients in a medium bowl, then sprinkle over the apples.
Bake about 30 minutes or when top is golden brown and apples are soft.
Serve with vanilla ice cream.
Makes 6 servings.

Maple Cheesecake

1 3/ 4 cups graham cracker crumbs
1/ 3 cups butter (melted)
1 cup sugar
3 pkg. (8 oz. each) cream cheese, softened
2 tsp vanilla
3 eggs
1 cup sour cream
1/ 2 cup Pure Maple Syrup (Davell's)

Preheat oven to 350ºF for an 8" or 9" springform pan. (Dark pans use 325ºF) Mix graham cracker crumbs, butter and 1/4 cup of the sugar in a bowl. Press mix firmly onto the bottom and up the sides of the pan. Set it aside.
Beat cream cheese, remaining sugar and 1/4 cup of maple syrup in a large mixing bowl on high speed until smooth. Add the vanilla, then add 1 egg at a time, mixing on low speed. Finally, add the sour cream. Pour into crust.
Bake for 1 hour to 1 hour and 10 minutes, until the center is just about set. Turn oven off and let set up for about 30 minutes with the oven door cracked. Move to a counter for another 30 minutes, then cool completely. Drizzle remaining maple syrup over the top and refridgerate.
Makes about 12 good size pieces.
You can top cheesecake with fresh blueberries, raspberries, sliced strawberries and then drizzle the maple syrup over the top of the berries. (Another favorite; add a tsp. of whipped cream to each slice )

Cranberry Maple Sauce

1 bag (12 oz.) fresh cranberries
3/4 cup pure maple syrup (Davell's)
1 large Gala or Macoun apple, peeled and diced into 1/4" pieces
1 cup pomegranate/ apple juice
optional: 1/4 cup finely chopped walnuts
Combine cranberries, maple syrup and juice in a saucepan and bring to a boil. Reduce heat and simmer, stir -about 15 minutes or until cranberries pop and sauce is thick. Remove from heat and add in apple pieces. (walnuts, if desired) refridgerate. Great on Pork or Chicken.

Butternut and Maple Squash

Peel and remove seeds of 2 medium squash, cut into 1/2" cubes and boil until soft.
(These can be put in the microwave as well)
Mash squash, with 1/4 cup of butter and 1/4 cup of pure maple syrup.
Add 1/4 tsp. cinnamon
1/4 tsp. nutmeg

Sweet Potato and Maple

1 Sweet Potato per person
Bake sweet potato in oven at 350ºF until soft.
Remove from oven and split in half.
Pour pure maple syrup over each half.
(Add salt and butter to taste)
